Although I haven’t stuck to my meal plan every week so far, I’m surprised that I’ve actually managed to keep going for this long. Any other time I’ve tried, it’s only lasted a week! I am finding it so much easier though with regards to wastage and time for making meals, as I know the evening before what we are going to have so I’m not rooting around looking for something the next day, and any leftovers hubby usually takes to work for his lunch. Last week I managed to stick to plan other than Sunday when we went to my father-in-law’s and had another BBQ (oops!).

Meal plan for w/c 21st July:

Monday – Chicken & vegetable stir fry (basically chuck in whatever veg needs using)

Tuesday – Creamy courgette & bacon pasta

Wednesday – Lamb rogan josh (using a meal kit from one of my foodie penpals)

Thursday – Jacket potatoes with various fillings

Friday – Fish Friday! (Cod this week – hubby’s choice)

Saturday – Pizzas (CYO – Create Your Own)

Sunday – Roast dinner & all the trimmings (not sure what yet, depends what’s on offer at the weekend. Probably a joint of meat slow cooked)

  2. Your meal plans look similar to my usual fare. Courgettes are abundant in my garden right now! I love stir fries or CYO pizza days to use up all those veggies kicking around the crisper…

    1. Courgettes are fab in a cake too! (With carrots) Yep the stir fry and pizza was to use up those! ;D
