Tandoori baked salmon | Recipe (Slimming World friendly)

Now I’m trying out new fish and recipes for our regular ‘fish Friday’s’ you might have a few more fish recipes coming your way – this week is salmon. It’s coated in a tandoori mix but it’s not too overpowering. I served it with tandoori veg rice but it would be lovely with potatoes and a salad too. Ingredients (serves 2 – plus extra tandoori spice mix) 2 boneless salmon fillets 1 tsp ground ginger 1 tsp ground cumin 1 tsp ground coriander 1 tsp paprika 1 tsp turmeric 1 tsp salt 1 tsp cayenne pepper Method Preheat oven to …

Baked plaice with tomato & basil | Recipe (Slimming World friendly)

Since I’ve seen all of the types of fish I can eat on Slimming World without counting the calories, I’ve decided to become a little more experimental with it! In our house we have ‘Fish Friday’ and it usually consists of scampi, cod/haddock, or mackerel. I’ve always loved the reduced shelf in the supermarket and now I’ve started raiding the fish section every week to see what I can find for the following week. One of my recent finds was plaice fillets, to which I added just a couple of simple ingredients which brought the flavour out just a little bit …

Pizza topped chicken | Recipe (Slimming World friendly)

Since I joined Slimming World last week I’ve been trying out a few new recipes and I hope it means I won’t get stuck in a food rut like I usually do when trying to lose weight! This recipe is a great alternative to a dough based pizza, and it’s all free on SW (30g cheese is a Healthy Extra)! It’s also great for the kids though and is fairly quick to prepare. It’s a nice change and really does taste yummy with lovely golden cheese. Ingredients (serves 4) 4 chicken breasts 250g passata 120g cheddar cheese basil (I used …

Recipe – Chilli & black bean burritos

Hubby & I both love eating Mexican food and have tried quite a few different meals & variations. I have had burritos before (pre-made ones), but I made them myself for the first time when I received these goodies to review from Old El Paso. I was rather pleased with them considering I had never folded burritos before either, they are actually quite easy! These were yummy served with home-made garlic & chilli potato wedges, but they could just as easily be eaten on their own. The jalapeno relish from my review goes really well with them too. Ingredients (makes …

Recipe – Crushed herby potatoes

I was experimenting recently when I fancied something a bit different to the usual roast potatoes with my Sunday dinner. It’s been a while now since we’ve had them as these are my new favourites being crispy on the outside yet fluffy on the inside, and are great as a side dish to many a meal. You can also leave the herbs out if you wish, they still taste delicious.  Ingredients (serves 4-5) 4 large potatoes, peeled and chopped about 2 cm square 1 tbsp oil herbes de provence, to taste Method Preheat oven to gas 5/ 375F / 190C. …
