Recipe – Lemon & ginger cheesecake

When I made this cheesecake, I just fancied something lemony, and I was thrown back to the boozy lemon cheesecake I made last year. I wanted this one to be child-friendly though, and that it was. It has just the right amount of lemon flavour, and the ginger gives it just a little more zing. It is quite sickly though so it might go further than the stated servings, it depends how much sweetness you can take! Ingredients (serves 6-8) 150g digestive biscuits 50g butter, melted 500g cream cheese 397g condensed milk 150ml double cream 2tbsp sweetener 6tbsp lemon juice …

Cheese & chive potato scones | Recipe (Slimming World friendly)

I’m a great cheese lover and before I joined Slimming World I would just cut blocks off and eat it like that – naughty! I do still enjoy it now regularly as my Healthy Extra A choice, but I don’t eat as much as I did before. When you’re not counting the calories in it, it can easily add up without you realising. I would always get low fat cheese as well but now I buy full fat and just have the lesser amount of my HEA. When you want to use your HEA for something else though, these cheese …

Recipe – Peanut butter & white chocolate blondies

This is a recipe I did for our last bake club meeting at the beginning of the month. The theme was tray bakes and I thought, well, I’ve made brownies plenty of times but never blondies, and I had some Reese’s peanut butter left from my cupcakes from last month’s bake club… So these were born! As the peanut butter is smooth there wouldn’t have been any crunch to them so I added banana chips as an alternative (peanut butter and banana is one of my favourite combinations!). You could always use crunchy peanut butter instead and leave the banana chips …

Salt and pepper chips | Recipe (Slimming World friendly)

One of my favourite ever Chinese takeaway dishes is salt and pepper chips – I could eat a carton of them to myself and I often get cravings for them, and whenever we do go down the naughty route and actually have a takeaway, I always order these – they are just so good! With doing Slimming World I could have them but they would be a great almighty number of syns! I had a really bad craving for them one night but I wanted to stay on plan, so I thought I’d attempt my own salt and pepper chips; they were really …

Recipe – Reese’s peanut butter cupcakes

Last year (and maybe the year before actually) a friend & I decided that we were going to start a cake club – even if it was only the two of us, ha! Our first meeting was last week and the theme was an easy one – cupcakes. I always have to go that extra mile and as I still had some of my Reese’s hamper left from Christmas (I know, I’m not sure how either) I decided to take these. I have no words to describe them – they might just be the finest cupcake I have ever tasted …
