Coconut energy balls

Thanks to A Strong Coffee and her recipe for a walnut cake using coconut oil, I have recently discovered how excellent coconut oil is! I’ve had an unopened jar sitting in my cupboard for months, and the first time I used it was a couple of weeks ago when I made the walnut cake. It was delicious, and using natural coconut oil rather than butter made it even better, as it added flavour with natural goodness.

Okay, so this isn’t an actual cheesecake or Eton mess, but it is quite reminiscent of a mixture of both of them!
