Recipe – Mini coffee cakes (#GreatBloggersBakeOff2014)

Coffee cake is a classic British cake. We love it in this house but these mini cakes are just the perfect size. Instead of using a mini cake tin I made them from a sheet cake. Ingredients (makes 8 mini cakes with leftover cake!) Recipe – Courgette & potato fritters

I experimented with this recipe after acquiring a collection of courgettes from our weekly fruit & veg delivery, and wanted to do something different with them rather than our usual pasta dish (it’s also nice in cake too!). We served them with sausages and peas but you could serve them as a replacement to any potato side dish you have really. One of our favourite cuisines and dishes in our house is Mexican fajitas. Most of the time we use chicken but on the odd occasion I will make steak fajitas for a nice change. Quorn Make Your Dish Famous – Perfect for Picnic

Quorn are running a two-weekly competition over on their Facebook page, to ‘Make Your Dish Famous‘. You must simply create a dish on a set theme using a Quorn product, and then submit a photo of it which then goes to judging.
