Recipe – Salted caramel & chocolate tart (#GreatBloggersBakeOff2014)

As we only returned from holiday on Friday and I didn’t have anything ready for this week’s bake beforehand, I’ve only had a couple of days to get something together before the linky closed (I could have just left it this week and nearly did, but thought I’d join in). I’m not happy with my bake this week – I had a soggy bottom (well, sides – because I didn’t roll to an even thickness) with not enough time to make another pastry case, and my ganache didn’t go too well either. I also didn’t have the right size tart …

This recipe makes a quick easy midweek meal for the whole family. It can be eaten as a main course or as a smaller side dish. I used whatever veg we had in but you can change it to suit you. Ingredients (serves 4 as a main dish) 2 bags of boil in bag rice (the cheats option) 1 tbsp oil (or you can use spray oil. none is needed if you use a ceramic or stone pan) 2 chicken breasts, diced 200 g mushrooms, sliced or quartered 4 large spring onions 100 g garden peas (tinned or frozen) 2 …

Blackberry & apple crumble | Recipe

Now in my opinion, you can’t beat a good crumble. Usually good for autumn & winter, but it’s perfect for our ‘summer’ at the minute! We had acquired some fresh apples & blackberries so I thought I would use them together in a crumble for Sunday dessert. The oats in the topping make it extra crunchy. Ingredients (serves 6) Filling 250 g blackberries 4 large apples, cored, peeled & diced 1/2 tbsp ground cinnamon 1 tsp caster sugar 1/2 tsp mixed spice Topping 240 g plain flour 120 g butter, room temperature 120 g caster sugar 50 g porridge oats …

Recipe – Sun-dried tomato & red onion topped focaccia (#GreatBloggersBakeOff2014)

I don’t often bake bread as I’m a much better baker of sweet items, but I needed wanted to join in with the #GreatBloggersBakeOff2014 again so I thought I’d attempt something which I’d made before – focaccia (though it was much better last time – this was a rush job in the end!). It is lovely & soft on both the inside & outside. Eat on its own or it’s also yummy dipped in balsamic vinegar. Ingredients (serves 4) 450 g strong white flour 1 sachet fast action yeast 1 tsp sea salt 250 ml warm water 4 tbsp olive oil 1 …

Recipe – Cinnamon sugar stamped biscuits (#GreatBloggersBakeOff2014)

I first made these biscuits when I was trying to find something cinnamon to go in one of my foodie penpals parcels. They are totally coated in cinnamon sugar yet it isn’t too overpowering – they are very moreish! Ingredients (makes approx. 30) Biscuits 200 g butter 200 g caster sugar 1 tsp vanilla (optional) 1 egg 425 g plain flour Cinnamon sugar  (You will find that this makes more than you need but you can save it for future. You can also add more/less sugar/cinnamon to your taste) 1 cup granulated sugar 1/2 cup ground cinnamon Method Preheat oven …
