Salted caramel pistachio millionaires shortbread recipe

Yes, this one is a bit of a mouthful – in more ways than one! But, it’s a delicious one. Millionaire’s shortbread is one of my favourite naughty traybakes, and I love anything that contains salted caramel. I’ve previously made this seasonal with mini eggs at Easter; this time I wanted to make it a bit more different, so I added some pistachios. I used some Dr Oetker products for this which cuts the work down a bit, but the end result is still super tasty. Finished off with a spray of gold, it makes the perfect afternoon tea treat!

I can’t quite believe we’re now almost half way through the year – it seems to have gone seriously quick. I think probably because J has been at school and I’ve only had one child to contend with during the day. Just one of the great things about Slimming World is the fact I can eat as much lean meat as I like, and not have to worry about counting syns on it. Some ready prepared meats with flavourings are synnable (yes, that is a word in SW vocabulary) so I try to buy it plain and add my own syn free flavourings. Whether it be a pre-prepared spice mix or I mix my own; but recently I was sent some rubs & spices to try from Bohns. They are all syn free too which is great news for Slimming World followers! …

Party planning is one of my favourite things to do, so when I don’t have anything to plan, I feel a bit lost.
