Recipe – Victoria sponge cupcakes

Victoria sponge is one of my all time favourite classic cakes, but made with fresh cream and fresh strawberries rather than butter icing and jam; any excuse for some fresh cream! Living the country life | Feeding, watching, and discovering birds

As we used to live in a flat with only a small courtyard, we didn’t really get any wildlife but the boys used to love helping to feed the birds when they visited Nanna. Since I discovered the Portable North Pole a few years ago, Jacob has had a message from Santa every year without fail. I don’t know about you, but I love a brownie. The way I like them – fresh out of the oven warm and gooey. I haven’t baked brownies for ages but with the Christmas season upon us, I thought I would get experimenting.
