Review – Quorn Spanish sausage casserole

Although our household isn’t vegetarian, we often eat veggie meals. Usually that means a meal without meat, but sometimes I will use Quorn as a meat substitute. As we are now on a bit of a healthy eating kick I’m trying to include a little less meat in our meals to save on calories, and Quorn is a great low calorie substitute, as well as being full of protein. Recipe – Courgette & potato fritters

I experimented with this recipe after acquiring a collection of courgettes from our weekly fruit & veg delivery, and wanted to do something different with them rather than our usual pasta dish (it’s also nice in cake too!). We served them with sausages and peas but you could serve them as a replacement to any potato side dish you have really.
