I don’t know about you, but I love a brownie. The way I like them – fresh out of the oven warm and gooey. I haven’t baked brownies for ages but with the Christmas season upon us, I thought I would get experimenting. With these two festive favourite flavours – candy canes and cranberries – I decided that they would be delicious in a brownie. I was right; these are amazingly gooey, minty and the cranberries give a sharp tang.

Since I started my Slimming World journey, I have eaten a much larger variety of lunches. Previously it used to be just a sandwich as it was quick & easy and took less than a minute to throw together, but it did get a little boring every day and I soon realised how much bread and carbs I really did eat, which wasn’t so good with PCOS either. Everybody loves a nice muffin, right? I may be in the minority but I prefer a fruity one to a chocolaty one. First of all, it’s healthier as it has fruit in, yes? Secondly, it’s so delicious biting into it and tasting the juicy fruit, and it looks so good oozing from the top. I love baking muffins as well as eating them, there are so many wonderful combinations and they can be made even healthier for children too but they still think they are getting a treat.
