Although our household isn’t vegetarian, we often eat veggie meals. Usually that means a meal without meat, but sometimes I will use Quorn as a meat substitute. As we are now on a bit of a healthy eating kick I’m trying to include a little less meat in our meals to save on calories, and Quorn is a great low calorie substitute, as well as being full of protein. I recently made this delicious looking – and sounding – Spanish sausage casserole. Most of the ingredients for this I already had in my cupboard or fridge; the only things I had to buy …

Recipe – Courgette & potato fritters
I experimented with this recipe after acquiring a collection of courgettes from our weekly fruit & veg delivery, and wanted to do something different with them rather than our usual pasta dish (it’s also nice in cake too!). We served them with sausages and peas but you could serve them as a replacement to any potato side dish you have really. Ingredients (makes around 10 large fritters) 2 large potatoes, roughly grated 2 courgettes, roughly grated 1 small onion, roughly grated 1 egg, beaten plain flour 1-2 tbsp oil Method Grate your potatoes, courgettes & onion into a large bowl. …
Foodie Penpals – June reveal
This month my parcel came from Laura over at Foodie Laura. I usually give spicy food as one of my preferences, and this box happened to be an international spice fest! I haven’t actually tried anything yet but I am really looking forward to doing so. First up was a couple of meal kits: Sri Lankan duck curry. Now this sounds delicious as we love duck but rarely ever have it, so I’m going to treat us to some duck this week and have it for dinner one evening! lamb Rogan Josh. this is one my favourite Indian curries so …
Recipe – Sizzling fajitas
One of our favourite cuisines and dishes in our house is Mexican fajitas. Most of the time we use chicken but on the odd occasion I will make steak fajitas for a nice change. Ingredients (makes enough for 4-5 wraps) 2 chicken breasts, cut into strips 1 large onion, sliced 2 medium/large peppers, sliced 1 tbsp oil (though using the Ozeri Stone Earth pan like I do you need less than 1 tsp) 2 tsp chilli powder (I use mild when J is eating them, hot when he’s not – I love the spice!) 1 tsp paprika (can use smoked if you …
Foodie Penpals – May reveal
Once again my foodie parcel was a bit lot late – it was worth waiting for though if only for the chocolate! I had a few items from overseas this time as my penpal Kelly was going abroad on holiday before sending my parcel, so I was looking forward to receiving things I may not necessarily have had before. In there was a mixture of sweet & savoury items. First up the yummy sweet treats: a bar of 72% dark chocolate with almonds. I usually eat milk chocolate so this was a lovely change. Sickly because it is so strong, but …
