So another month has passed in a blur – where does the time go?! It doesn’t feel like summer as it’s supposed to be. Due to the horrendous weather, we have spent more time indoors than outdoors in the last month. On the few sunny days we have had, though, we have enjoyed ourselves outside doing some things featured in our favourite five for June 🙂 (Though I am a little late as I haven’t had any motivation recently, or I’ve been super tired – both have probably gone hand in hand actually!).

Thanks to A Strong Coffee and her recipe for a walnut cake using coconut oil, I have recently discovered how excellent coconut oil is! I’ve had an unopened jar sitting in my cupboard for months, and the first time I used it was a couple of weeks ago when I made the walnut cake. It was delicious, and using natural coconut oil rather than butter made it even better, as it added flavour with natural goodness.
