Recipe – Chilli & black bean burritos

Hubby & I both love eating Mexican food and have tried quite a few different meals & variations. I have had burritos before (pre-made ones), but I made them myself for the first time when I received these goodies to review from Old El Paso. I was rather pleased with them considering I had never folded burritos before either, they are actually quite easy! These were yummy served with home-made garlic & chilli potato wedges, but they could just as easily be eaten on their own. The jalapeno relish from my review goes really well with them too. Recipe – Crushed herby potatoes

I was experimenting recently when I fancied something a bit different to the usual roast potatoes with my Sunday dinner. It’s been a while now since we’ve had them as these are my new favourites being crispy on the outside yet fluffy on the inside, and are great as a side dish to many a meal. You can also leave the herbs out if you wish, they still taste delicious.  Ingredients (serves 4-5) 4 large potatoes, peeled and chopped about 2 cm square 1 tbsp oil herbes de provence, to taste Method Preheat oven to gas 5/ 375F / 190C. …

#embracehappy – My word for 2015

Last year I found a group over on Facebook called Embrace Happy (you can also find posts on Instagram under the hashtag #embracehappy). It is the brainchild of the lovely Karin from Cafe Bebe and it has so many followers. I started off well and then I fell into depression and totally swept it aside. Well this year, is going to be my year, and I’m going to stick with it. The motto of the Embrace Happy group is: “Not every day is good but there is good in every day” And it’s oh so true. I am still having a lot of …

Favourite & popular blog posts of 2014

As we welcome 2015, I thought it would be a good time to look back on my favourite and most popular posts of 2014. I have had mega happy posts, and I’ve also had awfully depressive posts (literally). I’ve started heading the way of food blogging and the recipes seem to be going down well – I hope to post even more this year though. I’ve also been lucky enough to receive some great items to review – just one of the perks! Favourites One of my favourite reviews of this year was the Snoozle maternity slide sheet – I only wish …

Reflections on the year that was 2014

It’s the end of the year 2014 and a time to reflect on how it has been. Like years past, it has had its fair share of ups & downs but I have kept on battling through with the help of my husband and a few friends who have been there through it all. I’ve also said goodbye to some ‘friends’ at this latter part of the year and although I’m still in the depths of doom, it’s actually helped towards me feeling better.  We started January by realising that this was the year we were actually going to become parents again …
