I’m Stacey, a bookworm (or should that be dragon?!) from a quaint hamlet on the outskirts of Lincolnshire. In my late 30s, I’m a devoted mum to two wonderful boys who are both autistic—a unique aspect that makes them different, not less. Coconut coffee triple layer cake | Recipe

Coconut coffee triple layer cake

You may remember a few weeks ago that I reviewed a steam combi oven from Panasonic. I cooked so many things in it – including (but not limited to) chips, fish, chicken, bacon, beans; but the thing I was most excited to try in it, was baking a cake! Obviously, you could also make this in a normal oven. I was so impressed that I could actually bake a cake in the combi oven though! One of my favourite cakes is coffee cake. I love coffee. I love cake. Put them together – I’m in heaven! I also had some coconut flavour …

The lasting effects of bullying

Bullying is something that is often in the news; very recently, the case of the teenage girl who was beaten by another girl, whilst a group of boys watched on, and even recorded it. The first thoughts of surely anybody, would be that this is sickening. The beating alone is bad enough, but for a group to encourage and record; it’s just incomprehensible. I planned to have more EESP meals, and maybe one or two EESP days. I managed both of these goals and had an SP breakfast and lunch almost every …

Bakewell tart with lemon pastry | Recipe

As soon as I heard what the challenges were going to be for pastry week of GBBO, I was drooling. Danish pastries? Yes please! I was really tempted to try to make them but then I watched the show and, well… My mind was swiftly changed, ha! I think I’ll stick with ready bake ones, thanks… Anyway, I didn’t fancy fiddling about with filo either so I decided I would go with the technical (again!) of a bakewell tart. I made mini bakewell tarts a couple of months ago for my Macmillan Summer Lights fundraiser, but I’ve never made a big one before. …

Stepping into autumn with JD Williams | Review

After dropping 4 dress sizes since last year, I have had to constantly replace my wardrobe. Throughout my journey, it has always been from shopping in charity shops, or in the sales, so I’m not spending lots of money just to replace my clothes every few months. Now I am almost at the target and pretty much comfortable with the clothes size I currently am, I have started buying full-priced clothes!
