Review – Old El Paso sweet potato & chilli enchiladas

You may have read before that we are big fans of Old El Paso so when an email popped in my inbox asking if I wanted to try a new recipe I thought yes, I’ll give it a go! The recipe I opted for was sweet potato & chilli enchiladas. We love enchiladas, they are one of our favourite Mexican dishes, but we have never had a vegetarian version as we usually have chicken in them. I love sweet potato and chilli so I was really looking forward to trying this.

I was sent all of the ingredients (bar the vegetables!) to make the enchiladas.

It was a really easy recipe to follow, though I did think the mixture looked a little unappetising to start with but it tasted delicious in the end!

The end result was so tasty and not at all strange having no meat in it (I do like a veggie meal sometimes). The sweet potato and refried beans went really well together and weirdly did give it a bit of a meaty taste – or maybe I was just imagining that! The jalapenos gave it the real chilli kick.

I could have actually eaten more of these they were that yummy but two was more than enough to fill me up. I will definitely be making this recipe again!
